Beer is a fermented beverage which is generally brewed from malted barley (although other grains, including wheat, corn and rice, are often used). It is seasoned with hops, providing aroma and taste, as well as a most desirable bitter flavor.

Compared to a lager, an ale is a more full-body beer which is often darker in colour. The yeasts used to make an ale are referred to as “top fermenting” due to the traditional forming of a layer of foam on the surface. Top fermenting also gives ales a more distinctive flavor which is often characterized by fruit flavours and acidity. There are various types of ales including pale ales, dark ales, bitter ales, cream ales and wheat beers. Ales are meant to be served at a warmer temperature than lagers.

Lager is the most popular type of beer sold in Newfoundland and Labrador, particularly light lager. Lagers can range from sweet to bitter and pale to very dark but most are a pale to medium color. Lagers have high carbonation and hoppy aromas. They should be served very cold.

Porters and Stout are very similar with the major difference coming from the flavor. Both stouts and porters are dark (almost black) and are top fermenting style. A porter is typically fruity-dry while a stout is less sweet and usually identified by its rich, creamy head.
